Paleo French Toast Muffins


FOR THE SINGLE GIRL ON THE GO 


INGREDIENTS:

4 tbsp melted butter (or cocount oil)
2 tbsp coconut palm sugar (or honey/maple syrup)
2 1/4 cup almond flour
1/2 tsp salt
1/2 tsp vanilla extract
1 tbsp cinnamon
2 ripe bananas
3 eggs
1/2 tsp baking soda
For topping:
2 tbsp maple syrup
1 tbsp coconut palm sugar 

TOOLS REQUIRED:

2 mixing bowls, whisk or hand mixer, 12 cup muffin tin, muffin liners                          

INSTRUCTIONS:

Preheat oven to 350 degrees F

In one bowl mix all of the dry ingredients - flour, baking soda, salt, cinnamon (not sugar).

In a separate bowl mash bananas with a fork (seriously, don't underestimate the power of a fork).  Then add the remaining wet ingredients PLUS sugar - eggs, butter, vanilla extract, sugar.

Blend the dry into the wet with a mixer in 2 parts (to prevent flying flour) until it becomes like a wet dough (almost like cookie mix).  ...Taste test. :P

Spoon mixture into muffin cups about 1/2-3/4 full and bake 18-20 minutes.

GLAZE INSTRUCTIONS:

1.
Paint or dip muffin tops into maple syrup.
2.
Sprinkle sugar on top.

I am what most people would call NOT a morning person.  I have my coffee on a timer.  And my breakfast?  I can't be bothered.  On weekends...absolutely.  I'll wake up sometime in the early afternoon and make my hangover hash no problem -- with a trusty Bloody Mary sidekick.  But on a day-to-day, give me something fast and effortless please.  

Thus the banana bread in cupcake form was born - aka Paleo French Toast Muffins.  Honestly, you could throw these ingredients into a loaf pan and make legitimate banana bread but again.. who has the time?  I'd rather make muffins.  Freeze half and nibble on the other half throughout the week.  I think these little guys are the perfect on the go in the morning muffin orrrr the perfect after school sweet.  

Feel free to add stuff to this thing too.  Chopped walnuts, blueberries --- whatever you'd normally put on your french toast, y'know?  Some of my favorite local haunts get really creative so I might doctor up their ideas and share them here.  Let me know if that would interest you?  I hear there's one made with macerated cherries... yum.

  1. can i use whole wheat flour instead? i know its not paleo but its clean & its all I got!!
