Fried Egg on Warm Baby Kale


TWO MINUTE-TWO INGREDIENT BREAKFAST 


Sometimes I want a hot fresh breakfast that is delicious and I can make right quick!  And I always seem to have eggs and kale (or insert leafy green here) on hand.  One morning, I just didn't feel like a grab-and-go muffin or hard boiled egg.  I wanted something warm, but I was pressed for time.  That is how this recipe was born.  You flash fry your kale and top it with a fried egg - simple, easy - takes only 2 minutes.  My kind of meal.

You always have the option of dressing up this dish with additions - sometimes I throw in some cherry tomatoes with the kale or I'll sprinkle some feta/parmesan on top.  Make it your own and enjoy.

INGREDIENTS:

1 or 2 eggs (depending on your appetite
2 cups baby kale (or leafy green of choice)
Splash olive oil
Pinch S&P

TOOLS REQUIRED:

Skillet          

INSTRUCTIONS:

1.
Heat your oil on medium-low heat.  Add your kale and stir until just wilted, sprinkle with S&P.  Remove to a side plate with tongs and leave remaining oil in skillet.    
2.
Add your egg to the skillet and cook to desired wellness - 1 minute each side for over easy.  Place on top of wilted kale and sprinkle with S&P.  




SERVES 1
