Fast Chocolate Almond Butter Cheesecake


THESE 5 INGREDIENTS WILL SATISFY YOUR SWEET TOOTH IN 5 MINUTES OR LESS... TRUTH 


INGREDIENTS:

8-10oz ricotta cheese
1 tbsp maple syrup or honey
3 tsp cocoa powder
1/2 tsp vanilla extract
1 tbsp almond butter
pinch salt
Optional - Good Life Chocolate Chips,  Shaved Almonds, or Steve's Original Cinnamon Granola

TOOLS REQUIRED:

Bowl, spoon.                          

INSTRUCTIONS:

Combine ingredients in a bowl and mix thoroughly.  Top off with Good Life Chocolate Chips, shaved almonds, or Steve's Original Cinnamon Granola for a bit of crunch.  Pop into the fridge if you like it cold.  Pop into the freezer for 30 minutes to have a creamy ice cream-like treat!  
SERVES 1-2 (depending on the size of your sweet tooth)



Alright men, avert your eyes for two sentences (or read on for a helpful tip to win some points with the women in your life).  Sometimes, during a certain time in the lunar calendar, I get insane cravings for sweet foods.  They come on like a wave and I need to satisfy them as quickly as possible.  That's where this recipe comes in. 

When I buy the big container of ricotta to make lasagna, I inevitably have some leftover.  The end result is your gain.  I add a few ingredients to sweeten the deal and TA-DA: instant cheesecake.  Feel free to doctor it to your own liking.  I mean, I can imagine a million alternatives.  Try lemon juice and toasted coconut, for example.  Or cocoa powder and orange segments?  Maybe you want to add blueberries or blackberries or raspberries.   Or maybe you're a purist and only need honey, vanilla, and a pinch of salt (those are the three ingredients I would always add every time).  

Me personally?  I love almonds for a crunch.  I always add them to my ice cream.  And for this particular recipe, I experimented with a little crunchy granola for Steve's Original.  (No ties, I promise).   The cinnamon really added a special element.  Highly recommended!

And unfortunately, I'm without some Good Life Chocolate Chips (again, no ties).  Because whenever they're in my pantry, they don't stick around for very long.  But normally, I'd add those too.  (I told you I have a serious sweet tooth).  

You could double the recipe and split it up among 4 ramekins and serve as a dessert at a dinner party... just an idea.
